Dried apricots: a short introduction
Dried apricots are a traditional dried fruit. Small apricots are normally dried whole, while larger varieties are dried in halves, without the kernel or stone. When treated with sulphur dioxide, to achieve color retention, prevent bug infestation and prolong shelf life, their color turns vivid orange. Organic fruit not treated with SO2 vapor is darker and has a coarser texture.
Before the 20th century, they were omnipresent in the Ottoman, Persian, and Russian Empires. In more recent times, California used to be the largest producer, before being overtaken by Turkey, which accounts for 82% of world apricot trade, with the Malatya Province yielding about 95% of production. Dried apricots are an important source of vitamin A and potassium. Due to their high-fiber volume, they are sometimes used to relieve constipation or halt diarrhea.
NUTRITIONAL FACTS
Dried apricots belong to the dried fruit family and have a high nutritional value. They offer energy and, as a result of their low-water content, have a larger concentration of nutrients than the same quantity of fresh apricots. Apricots are consumed with their skin, hence are a rich source of natural fiber, which contributes to a healthy gastrointestinal system, prevention of constipation, cholesterol control and more.
Dried apricots have high levels of vitamin A and beta carotene. Both are powerful antioxidants that protect the heart, vessels and body cells against ageing. Apricots also contain significant amounts of vitamin C, a powerful antioxidant that boosts the immune system and contributes to skin health. They also contain small amounts of B-complex vitamins, vitamin E and potassium.
