Product & processing

Peanuts are legumes, although they are traded alongside tree nuts. They are offered in-shell or as kernels, with natural skin or blanched. Runner, Virginia, Hsuji, Bold, Java and Spanish designations help distinguish commercial types, but origin and calibration must also be stated.

Food industry applications

Whole kernels suit roasting, snack mixes and coating. Blanched kernels remove the red skin for processing. Peanut butter, bakery and confectionery buyers should specify flavour, roast behaviour and the physical form their production line requires.
