SESAME Seeds: a short introduction

The oldest oilseed crop known to humanity, the value of the sesame is mainly in the refined oil its tiny spores contain, but the wild plant’s oil-rich seeds that used to grow in sub-Saharan regions are arguably a thing of the past. Naturalized in India, Sesamum indicum is cultivated for its edible seeds in tropical regions around the world. Global production in 2016 was 6.1 million tones, with India, China, Nigeria and Tanzania being the largest producers.

Skinned or unskinned, sesame seeds are consumed raw or toasted, are pressed to make sesame oil, and ground to make flour, and tahini paste or butter. The ‘spicy’ richness of the flavor is renowned. Sesame oil is a major contributor to delightful Far East stir fries, while tahini, a delightful dip on its own, is also a vital ‘component’ of humus and halva.

Even if it weren’t for its crucial contribution to our health against heart disease, high cholesterol, diabetes, and arthritis, the sesame seed would still open the flavor treasure cave, and be savored as a delight.

Sesame is a highly nutritious food that can be consumed in many ways. Despite its plant origin, it is rich in amino acids. Furthermore, sesame is a source of natural fiber that enhances bowel function and prevents constipation, while it is also rich in “good” fats, which are associated with significant benefits for the cardiovascular system. As for its content in micronutrients, sesame offers high amounts of vitamin E - a powerful antioxidant - and B complex vitamins, especially thiamine and niacin, which are essential for the metabolism. Moreover, it is a good source of calcium, magnesium, phosphorus and iron. Finally, the nutritional value of sesame is enhanced by the presence of selenium and components, such as sesamin and sesamolin, which, according to studies, protect the body against oxidative stress and reduce the risk of diseases, such as cardiovascular diseases and various forms of cancer.
