The sunflower is a large annual plant, with a single large flower head. The flowers in the center mature into fruit – the sunflower "seeds" – and sunflowers are grown commercially as a crop for its edible oil and seeds. Russia and Ukraine are global leaders in sunflower oil production, and top per-capita consumers.

Linoleic, high oleic, and sunflower oil seeds are the most common varieties, each with particular levels of monounsaturated, saturated, and polyunsaturated fats, classified by the pattern on their husks (black, with beize-grey, same color as the kernel, stripes).

Either eaten as a snack, used as salad, meal garnish or ingredients in savory recipes, the seeds may be sold as seasoned in-shell seeds or de-hulled kernels.
