Organic cane sugar: a short introduction

In order to produce organic sugar from sugar cane, the syrup (which is rich in sugars) of the sugar cane is extracted. This juice is then boiled and evaporated until crystallization occurs. It tastes like caramel and can be used as a sweetener in cooking and pastry.
